Tomme de Savoie IGP
Tomme de Savoie is one of the oldest types of cheese from Savoy. For a long time, it was a cheese intended for domestic consumption and was an important source of protein in the diet of the rural population. The amount of milk available for cheese-making depended heavily on other uses for the milk, particularly as a sought-after source of fat. Farmers made this cheese with the milk that was left over, and Tomme de Savoie has been protected as an IGP (Indication Géographique Protégée) cheese since 1996. The geographical area includes the departments of Savoie and Haute-Savoie in their entirety as well as selected municipalities in the departments of Ain and Isère. The milk production, processing and maturing processes take place in the geographical area. The region is rich in fresh grass and there is a long tradition of rearing the traditional Abondance, Montbéliard and Tarentes cow breeds. They have a morphology adapted to grazing on sloping pastures, they tolerate heat and utilize pasture grass in summer and dry fodder in winter. They also produce milk that is ideal for making cheese.
Dried tomato, chives and Tomme de Savoie IGP muffinsFor 8 muffins: 100 g flour ; 2 eggs ; 1 teaspoon baking powder ; 120 ml milk ; 6 dried tomatoes ; 1/2 bunch chives ; 150 g Tomme de Savoie ; salt and pepperPreheat the oven to 180°. In a bowl, mix the flour, baking powder, milk and eggs. Finely chop the chives and cut the sun-dried tomatoes into small pieces. Cut the Tomme de Savoie into cubes and add everything to the previous mixture. Adjust the seasoning. Place your muffin tins in suitable molds and fill them 3/4 of the way full.
