The yeast plait can be made with either fresh or dry yeast. With the precise instructions on the paper packaging, the simple recipe is sure to succeed. The airy dough structure results in a fluffy plait with a unique taste. We have chosen gluten-free wheat starch as an ingredient because it is a natural product in organic quality, which guarantees a baking mix that is sure to succeed. It goes without saying that the limit value of 20 ppm is ensured by regular analyses.
Add:65 g butter, 235 ml milk, grated zest of a quarter of a lemon, 1 packet of dry yeast,2 eggs,up to 60 g raisins, if desiredHail sugar for sprinkling;Preparation time: approx. 40 min; Proofing time: 4-5 hours; Baking time: 15-17 min; Preparation:Heat the butter and milk in a pan until the butter has melted. Leave the mixture to cool to lukewarm (approx. 30 °C). Mix the baking mixture, dry yeast and lemon zest in a mixing bowl. Add raisins if desired. Add one egg and the white of the second egg. Cover the egg yolk with 1/2 tbsp milk and set aside. Add the warm butter and milk mixture to the flour and knead for approx. 10 - 15 minutes. Push the somewhat sticky dough together with a scraper and leave to rise loosely covered with a tea towel in a warm, draught-free place for approx. 3-4 hours. The dough should roughly double in size and a greased baking tray should be ready. Knead the dough briefly after it has risen, divide it into 3 equal, long pieces and leave to relax for 10 minutes. Shape each part into a roll approx. 2.5 cm thick. Place the strands of dough next to each other on the greased baking tray and carefully lay them on top of each other to form a plait. If the strands of dough break when you lay them on top of each other, gather the whole dough together, knead in a little lukewarm milk and shape again, brush the finished plait with the egg yolk and milk mixture and leave to rise for 1 hour. Heat the oven to 250 °C top/bottom heat. Brush the plait again with the milk/egg yolk mixture and sprinkle with caster sugar. Bake in the hot oven on the middle shelf for 5 minutes at 250 °C, then turn the temperature down to 180 °C and continue baking for 10 - 12 minutes. Remove the plait from the oven and leave to cool. tip: If using fresh yeast, first dissolve 1/2 a cube in the warm milk and butter mixture and leave to rise a little.
