Rice is naturally gluten-free. To ensure that the gluten content of our gluten-free rice flour is guaranteed to be below 20 ppm (20 mg/kg) gluten, the semolina is kept carefully separate from all gluten-containing products and analyzed several times. To this end, strictly separate product flows and separate production lines are used. Only when the last analysis confirms that the products are gluten-free do they leave our factory. We use glassine paper for an ecological and safe packaging solution for gluten-free products. This is very dense and has a grease barrier. We use a complete inner bag made of this paper for our bags for gluten-free products. It offers sufficient protection against subsequent contamination. Because it is made of 100% paper, it can be easily disposed of with the waste paper. The brown rice for our whole grain rice flour is grown for us by our partner farmers in Italy. The flour is suitable for gluten-free baking. Together with starch and a binding agent such as locust bean gum or guar gum, it is an alternative to baking flours containing gluten.
Wholemeal rice flour can be used together with starch and a binding agent, possibly mixed with other gluten-free flours, for baking gluten-free bread, rolls and other baked goods. It is also suitable for thickening sauces and soups; Gluten-free basic flour mix: Mix 1/3 rice flour, 1/3 corn flour and 1/3 corn starch. Add 2 teaspoons of locust bean gum or guar gum per 500 g of flour mix as a binding agent.
